I think that if not every housewife, then many are familiar with the situation when there is no bread at home, but there is either nowhere to buy it, or there is simply no way to go to the store. It’s for such cases that a simple recipe for flatbreads from yeast dough.
Making flatbreads from yeast dough is very simple. It is mixed in water without any dough; it does not need to sit for a long time or rest after molding. Baking is also simple - without steam, a hot stone and other attributes. The only thing they recommend doing is to heat the baking sheet together with the oven and transfer the parchment with the cakes onto the hot sheet. But you can do it as usual - immediately place the cakes on a baking sheet, let them rise a little and put them in a hot oven. I didn’t notice much of a difference, so do what’s most convenient for you.

Ingredients:

- dry yeast – 1 tsp;
- water – 200 ml;
- sugar – 2 tsp;
- salt – 1.5 tsp;
- vegetable oil (or butter, any fat) – 2 tbsp. spoons;
- flour – 300 gr;
- sesame, cumin or cumin - for sprinkling the flatbreads.

Preparation




Pour dry yeast and sugar into a bowl. Pour in 100-120 ml. good warm water (so that your finger feels hot, but does not get burned). Stir, cover and leave the dissolved yeast for 10-15 minutes to activate.





Thick foam and air bubbles should appear on the surface - this means that the yeast has begun to “work” and you can knead the dough into flat cakes.





Sift 300 grams of wheat flour into a bowl.







Pour the diluted yeast into the flour, stir until the flour is moistened.





Add the remaining water (if it has cooled, heat it up), vegetable oil, add salt. Add less or more salt, to taste. If you follow the recipe, the dough will turn out salty. Instead of vegetable oil You can add melted lard or melt butter.





Knead into a soft, sticky dough. It is more convenient to knead it using food processor or in a bread maker. If you knead with your hands, grease your palms with oil and knead not on the table, but in a bowl, so that it sticks less to the surface. During the kneading process, you can add a little more flour, but the dough should not become tight or dense, it will be softer than for pies or bread.







Cover the kneaded dough and place in a warm place for one hour. During this time we do not knead; the dough does not need kneading. In an hour (or a little earlier) the dough will be ready for baking. It will rise, increase in volume two to three times, and become very soft and airy.





Carefully remove the dough from the bowl and divide into four parts. We stretch each one with our hands on baking paper into an oval or round cake. Let sit on the counter for a little while (about 15 minutes while the oven warms up). Before baking, brush with water and sprinkle with cumin, sesame or cumin seeds (you can do it without sprinkling).





Preheat the oven with a baking sheet to 220 degrees. We transfer the cakes along with the paper to a hot baking sheet and put them in the oven. After five minutes, reduce the temperature to 200 degrees and bake for another 10-12 minutes until the cakes are browned. We serve hot flatbreads with first courses, meat, spreads, and dips. It is better to serve them cooled or warm with salads and pates. Bon appetit!

How to knead the dough for flatbreads? Flatbreads are baked dough products that appear flat and round. Flatbreads are prepared in the following countries: Central Asian, Mediterranean, Latin American. Preparing and kneading dough for flatbreads

The preparation of flatbreads is done using a single-phase method, and now I will describe to you three methods of the single-phase method.

The first method is “Simple unleavened dough”.

You need to dilute the salt in a deep container, add a little flour and immediately knead the dough. Then add water and the rest of the flour. Knead the dough, but make sure there are no lumps. Form the kneaded dough into a ball, place in a container, cover with a towel and leave to stand for ten minutes. Then start preparing the flatbreads.

The second method is “Yeast-free butter dough.”

To knead the dough, use the following ingredients: flour, milk, eggs, salt, butter. Mix all the ingredients, knead the dough, leave to stand for a while, and then you can start preparing and baking the flatbreads.

The third method is “Yeast butter dough”.

Use the following ingredients: flour, yeast, milk, eggs, salt, granulated sugar, butter. You need to heat the milk, throw the yeast into it, and let the salt dissolve. Then add sifted flour and milk in parts, knead, then add granulated sugar, milk, flour, knead. Place the dough in a container, cover with a towel, and place in a warm place until it rises. Then you can divide, roll out and cook the flatbreads.

You can bake delicious and fluffy flatbreads even if you don’t have an oven. Preparing this dish will not take much time.

Cooking method:

  1. Heat the milk slightly, dissolve the sugar and yeast in it. Leave for 10 minutes. in the warmth.
  2. Beat in the egg, add salt and mix everything well. Start adding sifted flour in small portions until you get a good elastic dough that does not stick to your hands.
  3. Leave the dough in a warm place, protected from drafts, for 1 hour. Don't forget to cover it with a towel.
  4. Punch down the risen dough and divide it into 4 parts. Roll each part into a round cake about 2 cm thick. Make several pricks in the cakes with a fork and leave them for 7 minutes.
  5. Fry the tortillas on both sides over low heat until done.

Please note that you cannot fry the flatbreads over high heat, otherwise they will cook on the outside but remain raw on the inside.

Yeast dough cakes with herbs

This version of flatbread will be cooked with dry yeast and served with a delicious sauce. To prepare the dish you need:

  • 1 kg flour;
  • 11 g dry yeast;
  • 4 tsp. Sahara;
  • 1.5 tsp. salt;
  • 100 ml sunflower oil;
  • 250 ml water;
  • 3-4 cloves of garlic;
  • 2 bunches of parsley.

How to cook:

  1. Half a glass is warm, but not hot water dissolve sugar and yeast. Leave this mixture in a warm place for 10-15 minutes.
  2. Mix the sifted flour with the infused yeast. Top up the remaining warm water, sunflower oil, add salt. Knead into a soft dough that sticks to your hands. Place it in a warm place for 30 minutes.
  3. Divide the dough into small fist-sized pieces. Crush each piece into a flat cake with your hand. Fry the tortillas in plenty of vegetable oil. While frying, bubbles will form on them. This is fine.
  4. For the sauce, pass the garlic through a garlic press, add chopped parsley, a little vegetable oil, salt and 1 tbsp. l. water. Lubricate the hot tortillas with the prepared sauce.

These flatbreads with herbs and garlic go well with first courses.

But based on the recipes described, you can prepare flatbreads with any fillings or sauces. For example, fluffy tortillas can be filled with mashed potatoes, rubbed with garlic or sprinkled with cheese. What you get is very tasty.
