How to make cookies from cottage cheese "Crow's feet"

Using a fork, knead the cottage cheese into a homogeneous mass. There should be no lumps in the curd mass, in this case the dough will be smooth, and the cottage cheese cookies will be a success!

Chop cold butter (180 g) with a knife or grate it on a grater with medium holes. The colder the butter, the easier it will be to do this (you can put a block of butter in the freezer for 5-10 minutes before starting cooking).

Sift flour (270-300 g) into grated butter.

Pour 2 teaspoons of baking powder into the dough. Combine with cottage cheese.

Mix the dough. Place on a surface dusted with flour, roll out the cake to a thickness of 0.5 cm. Using a glass, press out dough circles (I used a regular faceted glass). The larger the diameter of the circle, the larger the cookies will be.

Pour granulated sugar into a flat plate.

Dip each cottage cheese cookie into sugar on both sides. Then fold the circle in half, then in four. The result is a cookie dough in the shape of " crow's feet", it is also similar to ordinary triangles.

Place the cookies on a baking sheet covered with baking paper. My paper was new, untested, so I decided to grease it vegetable oil additionally for insurance.

Remember that you need to maintain a distance of 3-4 cm between cookies, as the baked goods will increase in size during baking.

  • wheat flour – 2 cups;
  • baking powder, or slaked soda - 1 tsp;
  • sugar – 1/3 cup, or to taste;
  • a pinch of salt.

Cooking method:

For curd dough, you need a package of butter, cut into cubes, for this it must be room temperature.

  1. Add cottage cheese to the container with butter and beat until smooth.
  2. Add salt, sugar, flour and baking powder to the prepared mixture. All ingredients must be mixed thoroughly.
  3. Roll out the dough as thin as possible and use a glass to squeeze circles out of it. Fold the resulting circle in half twice and voila, the triangle is almost ready!
  4. Place the curd triangles on a dry baking sheet covered with parchment paper. Sprinkle sugar on top. Cinnamon or cocoa can also be used as a topping, to taste.

Many people know “Triangles” cookies with sugar - they are tasty, easy to prepare and cute in appearance. appearance, the shape is similar to triangles, that’s why it’s called that. The dough for these cookies is prepared using cottage cheese, and the cinnamon-sugar sprinkle both inside and outside adds a special twist. There are a lot of cookies, 24 pieces, but next time I will make a double batch, they are very tasty.

Prepare the ingredients for the Triangle cookies: cottage cheese, butter, sugar, cinnamon, flour, soda, vinegar.

Remove the butter from the refrigerator 30 minutes before you start making the cookies. Then combine butter and cottage cheese.

Mash the cottage cheese with butter with a spoon.

Pour wheat flour into the curd mass, which is best sifted beforehand. Also add slaked soda to the cottage cheese. Someone may advise not to extinguish the soda, since the cottage cheese already contains lactic acid, but I extinguish it.

Knead the dough with your hand and gather it into a ball. Cut small pieces of dough, roll them out and cut out circles. Use all the dough by collecting scraps and using them in last resort. I got 24 circles, all the dough was used.

Pour sugar into a bowl and mix it with cinnamon. Now pay attention to the photo. I showed the sequence of actions in numbers for clarity, namely: place a circle of dough on one side in sugar (1 and 2), fold it in half inward with the sugar side (3), then dip one side in sugar and lightly press the middle edge with your finger so that the cookie holds when baking the pan (4), then fold the cookies in half again, sugar side inward (5), dip in sugar and use your fingers to seal the edges on one opening side (6). In principle, nothing complicated, I wrote longer than I did :)

So prepare all the cookies and bake them in the oven (30 minutes, 180 degrees).

This is how the curd cookies “Triangles” with sugar turned out in the end - tasty, rosy and appetizing!

Bon appetit!

Any baked goods with the addition of cottage cheese acquires a special, creamy milky taste and a crumbly, delicate texture. Covered with shiny sugar crystals, Triangles curd cookies, step by step recipe which I offer today, after baking remains tender and soft inside, and has the thinnest golden brown crust on the outside. I remember triangle cookies from childhood. Back then we called it “Crow’s Feet” and baked it often and in large quantities. The recipe is from an old cookbook, like most recipes from Soviet times, it consists of inexpensive, tasty and healthy products.

Ingredients:

  • soft cottage cheese or curd mass – 100 g;
  • wheat flour – 150 g;

Sift the flour through a sieve into a deep bowl. Pour in a third of a glass of granulated sugar. Mix with a spatula. As for sugar - if you have two types - fine and with large crystals, then it is better to pour fine sugar into the dough for curd triangles, and leave coarse sugar for breading and sprinkling of curd cookies. I only had small ones, which don’t make the breading very textured.

It is preferable to use soft, paste-like cottage cheese, but make sure that it is not liquid. a large number serum. Take the butter out of the refrigerator in advance and soften it at room temperature. Mix the cottage cheese with soft butter (do not melt it).

Rub thoroughly with a spatula or spoon. Personally, I prefer the second option. If the cottage cheese is dense, with lumps, take a masher and knead it vigorously. In a minute the mass will be smooth and homogeneous.

Combine dry ingredients and curd mass. Add baking powder. First, mix everything with a spoon, then put it on the table and knead the dough for “Triangles” curd cookies, soft but not sticky.

We form a bun, cover the bowl with plastic and put it in the refrigerator for 20-25 minutes.

Cutting off a small piece of chilled dough, roll it into a thin layer no more than 0.5 cm thick. work surface dust with a thin layer of flour so that the “Triangle” cookie dough does not stick to the board or table.

Using a glass or jar, or a culinary ring, cut out circles. Standard diameter 7-8 cm. We collect the scraps, roll them into a ball and put them in a bowl - we will also make curd triangles from them, but later, when we use the main dough.

Pour sugar into a flat plate. I added cinnamon, I love its flavor in baked goods. It seems to me that cookies made from Triangle cottage cheese definitely need some flavorings: vanillin, nutmeg, cinnamon. Dip one side of each circle into sugar, pressing it down.

Fold in half so the sugar side is inside. Lightly press the center with your finger so that the “Triangles” curd cookies with sugar retain their shape when baking.

We also bread the halves in sugar on one side. Then fold it in half, sugar inside. The resulting blanks for the curd triangles look exactly the same as for the crow's feet cookies, one to one. We press them lightly with our palm, using our fingers to flatten the corners on one side, otherwise the cookies may unfold in the oven.

Cover a baking sheet with paper. Dip the curd triangles into the sugar and cinnamon mixture and place them in rows, sweet side up. Place in a hot oven at 180 degrees. Bake for about 10 minutes on the middle level, then raise to the top and bake for another 7-8 minutes until pinkish-golden.

Important! Leave space between the cookies; in the oven, the baked goods will become more fluffy and increase in size.

Using a spatula, remove the “Triangles” cottage cheese cookies with sugar from the baking sheet and let them cool to room temperature. The hot cookies will be very tender; remove the browned curd cookies carefully so as not to damage them.

After about 20 minutes, the “Triangles” curd cookies will cool down and you can try them. The cookies sell out quickly, so bake a double batch at once so that you have enough for breakfast and a daytime snack. Bon appetit! Your Plyushkin.
