Some time ago, doctors argued that it is advisable not to use tomato juice for pregnant women, since it contains a lot of salts and acids. But recently, after numerous studies, scientists say that drinking this drink is not only possible, but also necessary.

Why do many expectant mothers sometimes want to drink tomato juice? The fact is that this desire arises only at the beginning of pregnancy, since the baby’s body begins to actively develop - the cells differentiate and all the baby’s organs are formed.

3 successful and proven recipes for homemade tomato paste.

Summer succeeded! Fleshy, bright, filled with the summer sun and bird singing, the tomatoes just ask for your hands: it is impossible to pass by a bush without picking a couple of pieces and eating them right away.

Alas, the possibilities of the human body are very limited, it is unrealistic to accommodate all the tomato luxury that the garden is full of this season, which means that we take out a dilapidated grandmother's notebook from the stash and start creating according to her recipes - time-tested and more than one generation of eaters.

So, tomato paste recipes.

Tomato paste for the winter - a basic recipe

Not a single one can do without this sauce: to make it bright, rich and “correct”, you need the best tomato paste. The best - as a rule, cooked at home, so in anticipation of winter, you just need to roll up five to seven liters of this product!

Ingredients:

  • 3 kg of ripe tomatoes;
  • 2 onions;
  • 100 g of sugar;
  • 1/2 cup table vinegar 6%
  • salt to taste.

Large photos Small photos

It is better to take tomatoes that are not very juicy - fleshy, elastic, firm, but by no means unripe. The variety "Cream" is optimally suited.

My tomatoes, remove spoiled places. You can not cut the peduncle - we don’t need extra gestures, we save our efforts!

We cut the prepared tomatoes into halves (moreover, it is not necessary to chop them strictly vertically, the division here is absolutely conditional). We put it in a saucepan (preferably enameled), put the peeled onion there, add half a glass of water (no more), cover with a lid and bring to a boil. Reduce the heat and simmer the contents of the pan for about 15 minutes - the tomatoes should become soft and let the juice go.

Pass the cooled mass through a sieve. Skins, stalks and seeds should get into the cake. We ruthlessly throw it away, and boil the resulting mass over minimal heat until it decreases in volume by at least 5 times. Stir occasionally so the pasta doesn't burn. At the end, add sugar and salt, taste and adjust the taste. Pour in the vinegar, mix and immediately pour into sterilized jars, cover with sterilized lids, roll up, turn over and hide under several blankets until cool. After that, jars of homemade tomato paste can be moved to the pantry and opened as needed.

  • Have you rolled up already?

Spicy tomato paste in the oven

In addition to borscht, homemade tomato paste significantly improves the taste of pasta and meat sauces, saltworts and kharcho soup, lasagna and cabbage rolls. Of course, the cooking process will take far from the 10 minutes required to enter the store, choose the coveted jar and pay for it at the checkout, but at the same time, the industrial product lacks one significant advantage - proven quality, a clear understanding of what is included in its composition, and ... and, oddly enough, sincerity.

Grandmother sometimes cooked tomato paste in the oven - it was easier and relatively faster: while the tomatoes were stewing, you could do a million other things.

Ingredients for the recipe:

  • 4 kg of tomatoes;
  • 4 tbsp. l. rock salt;
  • 1 tsp black ground pepper;
  • 1 tsp ground coriander;
  • 1 tsp cinnamon;
  • 10-15 carnation inflorescences;
  • basil, parsley, dill "umbrellas" and green celery.

How to cook homemade tomato paste in the oven

My tomatoes, cut off the spoiled places, put in a large sieve, which we put on a pot of boiling water, and boil for about 7-10 minutes. Most likely, it will not work to process tomatoes over steam at a time - which means we divide into several batches.

We wipe the softened tomatoes through a sieve, discard the cake, and mix the resulting mass with salt, pour it into a mold with large sides and put it in an oven preheated to 200 degrees. We cook for about 2-2.5 hours, stirring occasionally and checking the density. As soon as you understand that everything suits you, add spices. Tie the herbs into a bouquet and also put them in the sauce, trying to “drown” them. Cook for another half an hour, then remove the basil, parsley and celery, put the pasta in sterilized jars, cover with sterilized lids, roll up and, turning over, cover with several blankets. Leave the pasta wrapped for a day, then store the jars at room temperature in the pantry.

Tomato paste from weighed tomatoes

If for some reason none of your grandmother's recipes suited you, use my mother's technology - tomato mass, which then needs to be boiled down to a paste, she ... weighed in a piece of thick linen fabric. But I will not get ahead of myself - the recipe is very successful, it simply cannot fail. Natural tomato paste at home is more than real, I assure you!

Delicious tomato juice for the winter at home, recipe which we will consider in our article, the taste is much tastier than store-bought, and if you add spices and other vegetables there, then the expression: “If you want to do it well, do it yourself” will be most appropriate. This expression also applies to the preparation of delicious homemade tomato juice from tomatoes. Let's see how to cook it!

Some people boil the juice for about 40 minutes, but long-term heat treatment is not recommended, as vitamins and useful components of the natural product are lost. Keep on fire for a maximum of 10 minutes.

Important! If during the storage of the juice it exfoliated, do not worry, the pulp just separated from the liquid.

Tomato juice is very useful for constipation, cigarette abuse, and weight loss. The drink is introduced into the diet of baby food from 3 years.

Necessary conditions for harvesting tomato juice

Juice extraction methods:

  1. Boiling and rubbing is a time-tested and most time-consuming method. Cut carefully prepared tomatoes, put in a saucepan or cast-iron container. Cook on the stovetop or in the oven until soft. Rub the resulting mass through a sieve. You can use metal, but better through kapron. Using a kapron sieve, useful substances remaining after boiling will be preserved in tomato juice. With this method, all the juice is squeezed out almost dry, leaving only the skins and seeds.

You can make it easier, process the tomatoes through a meat grinder, bring to a boil in a saucepan or other container (except aluminum) and also rub through a sieve.

  1. Electric meat grinder. If this is not available, you can use an ordinary cast-iron meat grinder. You need to screw a nozzle on it to separate the juice from soft fruits. Everything - a simple device is ready to go!
  2. A juicer is one of the easiest ways to get juice from tomatoes. Convenient and fast!
  3. Pressure cooker. To prepare tomato juice in a pressure cooker, it is better to remove the skin from the tomatoes. This is not important, but then periodic stirring of the tomato mass will be required so that the skins do not prevent the juice from draining into the container. Spices are best added immediately to the juicer along with the tomatoes. From the remaining waste, you can cook a spicy appetizer with horseradish and garlic, or use it to preserve homemade salads and tomatoes in tomato juice.

Video with a step-by-step recipe for making homemade tomato paste from tomatoes for the winter.

Tomato juice for the winter at home is much tastier than store-bought, even if you just add a little salt. And if you mix spices in jars and bottles with tomato juice or create a blend of tomato juice with other vegetables? This is such a delicious treat, trust me!

But, before you start harvesting tomato juice, you need to meet several conditions.

  • When choosing tomatoes for juice, pay attention to the ripeness of the fruit. Tomatoes should be soft, you can even use slightly dented, substandard or slightly spoiled. Just try especially carefully to remove everything superfluous and unnecessary;
  • Tomatoes for juice should be fleshy. Choose the appropriate varieties when planning to plant tomato beds on your precious piece of land. Hard tomatoes are good for pickling, but not for juice;
  • Particular attention should be paid to cleanliness. Juice jars and bottles should be washed thoroughly with hot water and laundry soap or soda and warmed up well. Sterilization of containers can be carried out both in the oven and over steam. In both cases, sterile jars should be slightly cooled before bottling;
  • Roll-up lids must be acid-resistant - in other words, coated with a special compound. As for screw caps, there are no problems with them;
  • Do not reuse screw caps to seal juice. It is better to close them with jars of jam. Tomato juice (and not only it) requires complete sealing, and second-hand lids may have damage on the inside that is not visible to the eye, which can lead to air penetration and product deterioration.

Tomato juice for the winter at home can be obtained in several ways. Culinary Eden offers you all these ways, and you already choose what is more convenient for you.

The easiest way to extract juice from tomatoes is with a juicer. But do not expect branded foreign beauty juicers to help you in this matter. You are tormented with them, since the machine will work for 10 minutes, and rest for half an hour. The best choice is the nozzle for extracting juice from soft fruits. It is screwed onto a regular cast-iron meat grinder. You can use an electric meat grinder, things will go more fun. Waste is small, but it exists.

The old-fashioned way of taking juice from tomatoes is by boiling and rubbing. Prepared tomatoes are cut, put in a saucepan or cast iron and boiled until soft on the stove or in the oven. The resulting mass is rubbed through a sieve. It is easier to use metal, but if you do not want to lose the vitamins remaining after heating, wipe through nylon. This is perhaps the most waste-free method in which all the juice is squeezed out almost dry. Only skins and seeds fly into the bucket. But he is also the hardest.

You can simplify your task and pass the tomatoes through a meat grinder, heat them in a saucepan or bowl and also rub through a sieve. Just do not use aluminum containers to heat the tomato mass, aluminum does not like an acidic environment.

Juicing in a juicer will undoubtedly make your life much easier. The only concern will be only periodic stirring of the tomato mass so that the skins do not interfere with the flow of juice into the container. But this problem is easily solved if you spend a little time removing the skin from the tomatoes. Add spices immediately to the juicer along with the tomatoes. There is quite a lot of waste left, but they can be used for cooking homemade ketchup, preparing winter salads or preparing a spicy appetizer with garlic and horseradish, which for some reason everyone calls adjika.

You can make tomato juice for the winter at home even more useful by adding juices from other vegetables to it. For example, beetroot is very useful, but not every child (and even an adult) will agree to drink beetroot juice. And mixed with tomato - please! Add any juice that matches your taste with tomatoes, and get healthy and tasty cocktails. The main condition is that tomato juice should be at least 50%, and preferably all 75%. Salt and sugar are not necessary to add or you can reduce their amount by adding to taste already at use.

Good luck preparing!
