Why is it bad to eat soup? Is soup good? Vegetable and fish soups

Russia ranks second in the world in soup consumption, eating more than 30 billion servings a year. In this regard, we are second only to the Chinese. In the first place, our compatriots, who in the vast majority (90 percent) cook soups at home, have borscht, then cabbage soup and noodles with chicken.

Offal soups

According to the chief freelance nutritionist of the Ministry of Health of the Republic of Belarus Marina Popova, the risks associated with the use of offal outweigh the benefits of them. Suffice it to recall that the function of the kidneys and liver is to detoxify the body.

Consequently, all the most harmful that animals eat settles in these organs. A great threat to our health comes from the heart of an old and possibly sick cow. According to Marina Popova, there are no less harmful substances than in the kidneys and liver.

Traditional beef bone broth can also be harmful. Animal bones contain large amounts of heavy metal salts. Such a broth overloads the stomach, has a bad effect on the liver.

The content of creatine in the bones is also not harmless to humans. A sufficient amount of this substance is produced in our body, which contributes to normal metabolism. But as soon as the level of creatine (due to highly infused broths as well) begins to exceed the norm, a metabolic pathology occurs. This negatively affects the function of the urinary tract and the functioning of the kidneys.

Borsch

Nutritionists, who have long been arguing about the benefits and harms of soups, will unanimously say that people with stomach diseases (who were usually advised to eat mainly soups) should never eat borscht or cabbage soup. Tomatoes and sauerkraut are an additional irritant for an already sick stomach. But even if you are healthy, it should be borne in mind that cabbage and carrots, which are part of borscht, most actively absorb nitrates of all vegetables.

Borscht lovers gradually accumulate nitrates in the body, which threatens to oxidize the iron molecule in hemoglobin and, as a result, leads to problems in transporting oxygen in the blood. The result is a violation of the respiratory process.

And the frying, which is part of the Ukrainian borscht, increases the risk of gastritis and even stomach ulcers. In addition, frying on bacon - an indispensable attribute of Ukrainian borscht - contains a large amount of harmful cholesterol, which is the scourge of the heart and blood vessels.

Borscht with sorrel is considered one of the most fortified dishes. Russian scientists, having studied the properties of oxalic acid, came to the conclusion that after heat treatment it becomes inorganic.

In this form, it forms a compound with calcium, which destroys the nutritional value of both substances. Calcium deficiency thus increases, leading to caries and osteoporosis. And the inorganic oxalic acid itself, gradually accumulating in the body, precipitates in a crystalline form. Crystals settle in the kidneys and bladder in the form of "stones".

Chicken soup

The most useful is chicken soup. Doctors say that until recently, this was the case. But now chickens for cooking are bought in stores where they come from poultry farms and farms.

Many farmers and almost all poultry farms use various chemical additives when growing poultry for rapid weight gain. Russian doctors conducted an experiment.

The chicken carcass, which was grown using tetracycline - one of the most common, but quite dangerous antibiotics in large quantities - was boiled for 30 minutes. Then they took the meat for examination. There were traces of the antibiotic in almost all the muscles of the bird. After another 30 minutes of cooking, all the harmful substances were in the broth.

And if chicken meat is freed from them, then antibiotics remain in the skin forever. In general, when the bones of any animal or bird are boiled, arsenic and mercury compounds enter the broth, which accumulate in bone tissues. And besides them, there is still a huge amount of substances undesirable for the body. They are especially harmful to children.

Vegetable and fish soups

Vegetable soups are often called flawless: no cholesterol and harmful substances from animal bones, but just a storehouse of vitamins. Recent studies by scientists have proven that vitamins lose their beneficial properties already at a temperature of 57 degrees. Therefore, vegetable soup is one of the most useless dishes. Unless, of course, we are talking about cold soups - such as, for example, okroshka.

Fish and seafood soups occupy an increasingly stable position in the menu of Russians. Along with the traditional fish soup from river fish, recipes have appeared from all kinds of delicacy fish, as well as squid, mussels, shrimp, octopuses.
However, sea fish is becoming more and more dangerous product from year to year. Japanese scientists have found high levels of mercury in it, even in those coastal areas that have traditionally been considered environmentally friendly.

Eating fish high in mercury causes severe poisoning. Moreover, it does not appear immediately, but as mercury accumulates in the body.

A lot of mercury is also found in squid. However, other seafood also absorb all the radioactive substances and poisons that are found in their habitats. In the same squids and shrimps, a large dose of arsenic was found. Mussels contain saxitoxin, a nerve agent.

Instant soups

The most dangerous, of course, are instant soups. They were originally invented for the starving population of African countries. Their main composition is preservatives and flavor enhancers. Specialists of the Russian Independent Expert Laboratory investigated the chemical composition of the ingredients that make up instant soups.

The head of the laboratory, Vera Pisareva, said that the natural ingredients declared on the packaging in the form of beef or pork meat were confirmed in the course of research. Only fibers of "beef origin" in the form of crackers can hardly be called meat, they can be any parts of a cow, and it is not possible to determine which ones.

But the sodium content is easily determined. In soup mixes, they often make up half of a person's daily sodium requirement. The American Heart Association recommends that an adult consume no more than one and a half grams of sodium per day, while chicken broth contains 747 milligrams of sodium, beef - 893 milligrams, fish - 776, and vegetable - 940 milligrams.

Soup is a traditional dish for all peoples of the world. Depending on the ingredients, it can be high-calorie or dietary, light or satisfying. It can be a lean broth with a small amount of vegetables, a thick and rich borscht, or an exquisite puree soup that melts in your mouth.

We were taught from childhood that first courses are healthy. But today they have many opponents. So, what outweighs on the scales - benefit or harm? Let's figure it out.

Benefit

The broth prepared on high-quality meat does not cause allergies, contains most of the necessary nutrients.

The main advantages of first courses:

  • Quickly digested
  • Stimulate digestion
  • Warm up
  • Increase appetite
  • Normalize blood pressure

Puree soups on vegetable, weak meat or fish broth are indicated for diabetes, as well as stomach diseases. On chicken or veal broth, you can cook soups for children of kindergarten and primary school age.

Popular soups in our diet

Chicken

Chicken broth contains substances that suppress inflammation. It is useful for sore throat, flu, atherosclerosis. It is loved not only for its excellent taste, but also for the feeling of warmth and comfort that we associate with the hearth and grandmother's care.

In addition, he:

  • Stimulates the work of the stomach, pancreas and gallbladder and is useful in chronic pancreatitis, diabetes and low acidity
  • Exciting effect on the nervous system, invigorates
  • Normalizes digestion
  • Slows down infectious processes
  • Liquefies phlegm in the bronchi

The stimulating properties of chicken broth turn into harm in a number of ailments: high acidity and ulcers, during an exacerbation of pancreatitis. In particular, it is contraindicated in gout and urolithiasis.

Soup puree

In the puree soup, the ingredients are finely ground and diluted with broth. Due to its creamy, delicate texture, it has a beneficial effect on the functioning of the stomach.

Thick mashed soups have excellent taste. Besides:

  • They are comfortable for the stomach.
  • Perfectly unload the body
  • Are quickly digested
  • Appetizing look
  • Help improve peristalsis
  • Regulate water-salt balance
  • Well digestible and energizing

Such soups are useful for children and the elderly.

pea

Pea soup is an international dish. What kind of food is not put into it - celery, onions, smoked sausages or ribs, pork, lard, etc. Depending on the ingredients, its calorie content can be quite high. But the healing properties and benefits of pea soup more than cover the harm of fats. Judge for yourself:

  • Normalizes metabolism
  • Beneficial effect on the heart
  • Helps fight depression
  • Strengthens the immune system
  • Regulates blood pressure in hypertension
  • Normalizes sugar levels in diabetes

It has a lot of protein and carbohydrates, potassium, magnesium, phosphorus.

Vegetarian

Effective vegetarian soup for weight loss and maintaining ideal weight. After all, it has fewer calories than fried or stews, but is highly nutritious. It is useful for diabetes, gastrointestinal diseases (especially mashed soups), in which it is necessary to limit the consumption of raw vegetables and fruits.

When cooking, almost all the nutrients from vegetables pass into the broth. Ideal low-calorie vegetable soup for weight loss and body cleansing. Nutritionists recommend from time to time to arrange fasting days with celery or onion soup.

Onion

Despite the fact that the main ingredient of onion soup is a “tear” vegetable, its taste is unusually refined. No wonder this dish is so popular in France.

The healing properties of onion broth lie in its antimicrobial and vitamin properties - it:

  • Rich in calcium, iron, vitamins.
  • Normalizes hemoglobin
  • Strengthens bones and tooth enamel

This soup is ideal for weight loss and metabolism activation. Recent studies have proven the beneficial properties of onion soup for the prevention of cancer, diabetes, pancreatitis, gastrointestinal ulcers, and inflammation of internal organs.

Lactic

We all know about the benefits of dairy products from childhood.

This dish:

  • Beneficial effect on the gastric mucosa
  • Contain a lot of protein, mineral salts, amino acids
  • Pairs well with vegetables, cereals, pasta
  • Allows you to significantly diversify the menu of kids
  • Neutralize the harm of chemicals that enter our body with air, food and water

People with stomach diseases should definitely eat liquid and pureed meals.

Harm

Oddly enough, first courses also have opponents who believe that it can be harmful.

Here are their main arguments:

  1. 70% of vitamins and biologically active substances are destroyed during cooking.
  2. The broth is almost instantly absorbed by the intestines. Undigested meat extracts that the liver does not have time to process harm the body.
  1. When cooking, antibiotics, hormonal growth stimulants contained in meat are transferred to the broth in full.
  2. The harm of first courses is also due to high fat content. Rich broth increases blood cholesterol, clogs blood vessels, overloads the liver, adds extra pounds and increases the risk of tumors. It is hardly possible to recommend such a soup for weight loss and recovery.

It turns out that the harm of this dish for the body has quite tangible consequences?

How to cook

Should you include it in your diet? Definitely yes. It just needs to be cooked right.

To brew a "safe" broth:

  • give preference to the meat of young animals
  • remove the skin from the bird before cooking
  • choose lean meats that are low in cholesterol
  • pour off the first broth
  • use melted water whenever possible
  • it is better to stew vegetables until half cooked and put in a dish at the very end of cooking

About mood

First courses are more than 70% water. And water is able to record and store information about all the phenomena and objects that it has come into contact with. Therefore, the benefits of soup can be multiplied several times if an appropriate atmosphere is created during its preparation. If you put love and warmth into your dish, your loved ones along with food will receive a positive charge of emotions, a message of your love and care.

When you cook in a good mood, with soul, any dish (no matter what it is - puree soup for a dinner party or a simple vegetable soup for weight loss with a couple of cabbage leaves) turns out to be tasty and healthy.

Video about the benefits and dangers of soups

Recently, soups are considered less and less popular. They are increasingly being replaced by fast food. After all, many today have already forgotten that, according to Russian traditions, soup was always the first dish. Now opinions differ, is it useful or is it still considered harmful?

Useful properties of soup:

The first course should always be hearty, but at the same time it can be light. During cold weather, the soup warms well, improves metabolism, the body receives more heat and energy from it. The soup is well digested, promotes good digestion. In it, more useful substances are not lost, but remain preserved than in other dishes that are subjected to various methods of frying and stewing. These useful substances and the very gentle method of cooking, as well as the presence of liquid, protect against the occurrence of gastritis.

Soups may contain fewer calories than some main courses.

To improve health in various diseases, soups play a restorative role.

The level of blood pressure depends on the fluid balance that liquid meals restore.

Chicken broths affect blood vessels, as well as having an anti-inflammatory effect, they alleviate colds.

It is useful to use soup, both for lunch and dinner.

Soup helps to cope with excess weight due to its low calorie content, it makes them feel full faster, but it is difficult to overeat.

Soups without meat help to restore normal intestinal microflora.

When cereals are added to them, toxins are removed and prevent the absorption of cholesterol, which is harmful to the body.

To make soups even healthier, you need to use different types of soups at different times of the year. For example, in winter it is better to eat more rich, and in summer lighter ones.

The negative properties of the soup:

If you remember the rules of separate nutrition, then it is not recommended to consume liquid and solid food at the same time, and the liquid contained in the soup, if it is in large quantities, dilutes the gastric juice and reduces the efficiency of the digestion process.

Processing food under the influence of temperature significantly reduces the nutritional properties. Raw vegetables contain more nutrients than the same vegetables cooked.

When using the broth, you need to be prepared for the fact that harm can be done to the whole body. This will be facilitated by substances that can be formed during the heat treatment of certain products and which will not have time to process the liver due to rapid absorption into the intestines. For example, if you have not cooked beans or any legumes, then harmful and even toxic substances will enter the bloodstream much faster, which will not bring you any benefit.

Creatine, as a harmful chemical, enters the broth when cooking meat. In addition, there are other harmful substances that are used for the rapid growth of animals.

You can cook soup plum broth, in which meat was cooked for 5 minutes, thereby getting rid of harmful substances and continue cooking on the second broth.

When cooking chicken or meat broth, when it cools, you should remove fat from it, which is visible and dilute with water. In the resulting weak broth, there are fewer harmful substances.

You can cook the meat separately and add it to the vegetable soup, cooked separately.

Soups that should be preferred:

Pea soups. It contains a substance that helps the synthesis of amino acids. With its shortage, dermatitis occurs. It also improves intestinal peristalsis. Such a soup is hearty, but can be both low-calorie and high-calorie, depending on the additives and thickness.

Rassolnik. It is useful because of the content of pearl barley in it, where there are many vitamins and trace elements. They improve the body's resistance to viruses, help strengthen the muscles of the heart, remove toxins and strengthen the body as a whole.

Eating soups, the body will be strong and healthy. Do not forget that fast food is very unhealthy, although tasty. Therefore, more preference should be given to soup. Soup is a good helper for those who are trying to lose weight.

Some say that soup for lunch is a must, while others, on the contrary, talk about the harmfulness of soups. Which of them is right

© Henry Jules Jean Geoffroy

Listening from a grandmother or mother “Eat soup, otherwise you will earn an ulcer” for children in our country used to be familiar. But now, in the age of the Internet, a lot of information has become available on proper healthy nutrition, which is sometimes quite contradictory. Some say that soup for lunch is a must, while others, on the contrary, talk about the harmfulness of soups. Which of them is right?

How good are soups...

1. Hot soups are very good food in autumn and winter. They have a beneficial effect on metabolism, warm and quickly absorbed, supplying the body with energy.

2. If the secretory function of the stomach is insufficient, eating soups with meat broth can stimulate the secretion of gastric juice, ensuring better digestion of food.

3. Despite the fact that the products in soups are subjected to heat treatment, unlike stewing or frying, some of the substances beneficial to the body are not destroyed.

4. By including soups in your diet, you can control your fluid balance. Most people do not drink enough water during the day, and with the help of first courses this deficiency can be easily filled.

5. Chicken broth soups can fight the symptoms of colds and have a positive effect on the immune system. This is due to the fact that during the cooking process, the proteins contained in chicken meat partially break down into special peptides that act as immunostimulants.

6. Proper weight loss or maintaining it at the right level is easier to organize if there is soup for lunch, and not main courses. With the same volume, the first courses contain fewer calories, but there is no reason to stay hungry - the broth creates a feeling of fullness. American nutritionists even conducted a special experiment: two groups of subjects were offered to dine with dishes prepared from the same products, but one - in the form of soup, and the other - in the form of a second. Everyone had the opportunity to eat until full, but the calculations showed that the group who were offered soup consumed an average of 35% fewer calories.

...and what's wrong with them?

Although soups have many undoubted advantages, they also have disadvantages:

1. If you have a sick stomach (ulcer, gastritis, accompanied by high acidity), then meat broths are undesirable, as they stimulate additional acid secretion. But even in this case, light vegetarian soups can be eaten with pleasure and health benefits.

2. The liquid, which is the basis of the first courses, dilutes the gastric juice, reducing its concentration and thereby slowing down the digestion of food. It is for this reason that supporters of the principles of separate nutrition even drink tea no earlier than half an hour after eating, and refuse soups altogether.

3. Fatty, rich broths from meat or fish, doctors recommend to exclude from the diet suffering from pancreatitis, kidney disease, gout. It is also useful to refuse them for people with high blood pressure or atherosclerosis, especially the elderly.

4. In the process of cooking the broth, most of the harmful substances from the meat get into it. Most often, these are various additives, steroid hormones, antibiotics used in the process of raising livestock. If the broth is boiled from bones, then such undesirable compounds for our body get into it, which are deposited there throughout the life of the animal, such as salts of heavy metals.

5. Heat treatment in the form of cooking, although it is quite gentle compared to other methods, destroys vitamins. If, instead of soup, a salad is prepared from the same vegetables, such a dish will be healthier for health.

Should you eat soups?

Vegetarian light soups, especially mashed vegetable soups that are quickly absorbed by the digestive system, are good for everyone to eat, but in moderation: you should not lean on them to the detriment of eating vegetables without heat treatment. You can eat soups and meat broth for lunch, if you do not have diseases in which they are contraindicated. Do you want this soup to be healthier? Just follow the following cooking rules:

Meat should be taken without bones and with a small amount of fat. It is best to use chicken, turkey, veal, rabbit meat. The broth from such meat is considered dietary, especially if its first broth is drained.

Before cooking, cut off the fat and sinews from the meat, put it in a pot of cold water, and after boiling, cook for at least 10 minutes. The most active harmful substances from the meat during this time will pass into the broth, after which it must be drained. Then again fill the meat with water and already boil the broth, as usual. Some supporters of a healthy lifestyle repeat this procedure even twice in a row, but one is enough.

In order for your soup to acquire not only a pleasant, appetizing aroma, but also a solid portion of the vitamins the body needs, add fresh herbs to it after it is finally ready.

Only you can decide for yourself whether to eat soup for lunch. But one thing is for sure: the idea that it is necessary to eat it every day is an old Soviet myth. Some nations do not have such a tradition, but at the same time they eat wholesome healthy food and do not suffer from diseases of the digestive system due to the lack of first courses. Therefore, the main thing is to eat right, eat varied, and be healthy!

In this article, I will tell you if you need to eat soups, borscht, etc.)). Are they useful, if so, what? as in general soups, borscht, etc. affect the human body and much more ...

In the post-Soviet space, all of us (well, or the absolute majority) were taught from childhood to eat (traditionally for lunch), first the 1st, and only then the 2nd)). That is why, for us (I mean our people, well, maybe not all, but the vast majority) - soups, borscht, etc. this is a familiar and tasty thing)), passing from generation to generation, and with which you will not surprise anyone ...

To be honest, I'm even afraid to talk negatively about this case, they'll still throw stones, hehe)). But I'm not going to hide the truth, as always.

In soups, borscht, etc. - for the most part contains LIQUID (water, about 50% if memory serves) and VEGETABLES (well, for example, in borscht beets (beetroot), carrots, cabbage, potatoes, onions, beans, tomatoes (tomatoes)), some also COMPLEX CARBOHYDRATES (for example, or).

Who is not in the know, vegetables and fruits are vital (needed), because. are essential components of a balanced diet and are not inferior in importance to other essential substances (, ), because. they contain vitamins and minerals and fiber.

  • I don’t think it’s worth talking about vitamins and minerals, because. and so you all understand that they are extremely important (vital) to every organ, every gland, every muscle and cell of our body for a balanced and not only work of the whole organism.
  • But few people know about fiber ... and it, in turn, is extremely important, because. absorbs accumulated slags and toxins and removes them from the body, contributes to the absence of constipation, etc.; promotes better digestion of food; binds cholesterol and tactfully removes it from the body, and thus, the cholesterol level decreases, and with it the risk of atherosclerosis and other diseases; and also has many other extremely useful features.

But be that as it may, soups and borscht are not the best product (in my opinion) possible. In short, soups, borscht, etc. are the worst quality alternative (analogue) of fresh VEGETABLES and FRUITS! Why? Yes, because in soup, borscht, etc. will contain much, I emphasize, MUCH less vitamins and minerals and fiber than in fresh fruits and vegetables.

Who does not know, heat treatment (it is present in soups, borscht, etc.) kills vitamins and minerals, which cannot be said about fresh fruits and vegetables (and therefore it is better).

Here it is, in a nutshell. In many foreign countries, people do not use any soups, borscht, etc. at all. and what now, they all have ulcers, colitis, gastritis, problems with the gastrointestinal tract, digestion, etc.?))

Of course not ... And all because people simply simply)) have the opportunity to eat all year round (well, if not the whole year, then in any case, much more often than ours) FIBER (fresh vegetables and fruits), respectively, they no alternative (replacement, like ours) is needed. That's it (the whole secret).

We (in our countries) do not have such an opportunity in the cold season (in winter). Accordingly, to compensate for this (lack of fiber, vitamins and minerals), the worst quality alternative (analog) is used, i.e. those same soups, borscht, etc.

  • In general, if you have the opportunity to eat fresh FRUITS and VEGETABLES all year round, then you can easily not use SOUPS, BORSHCH, etc. GENERALLY not afraid that you will have problems with the gastrointestinal tract, gastritis, ulcers, constipation, etc. fictional garbage (proof of this is the huge number of countries that do not consume soups, borscht, etc. GENERALLY, for example, England, Italy and etc.).
  • If you do not have the opportunity to eat vegetables and fruits all year round (for example, in the cold season, i.e. in winter), then SOUPS, BORSHCH, etc. in my opinion, they are even necessary, because it is still BETTER than nothing at all. Those. so you get at least some vitamins and minerals, at least some of their number, and, accordingly, at least some kind of fiber. Do you understand?

Those. in other words, fresh VEGETABLES and FRUITS are 100 times better than soups, borscht, etc., but if you don’t have them, then at least something (soups, borscht, etc.) is better than nothing at all ...

Talk about the fact that soups, borscht, etc. are something unrealistically useful, and everyone should use them daily, otherwise there will be problems with the gastrointestinal tract, digestion, etc. , - in no case will I (it is impossible). This is not even close. But don't get me wrong, I'm also not saying that soups, borscht, etc. - this is categorically BAD, and they should not be eaten. This is also not close. Although, there are exceptions.

Many experts argue that meat or chicken soup / broth, etc. can be potentially hazardous to health. The fact is that soups (liquid food) are very quickly absorbed by the intestines, unlike solid ones. And this, in turn, does not allow the liver to have time to process the meat extracts contained in them (after all, who does not know, meat is not only good for the body, it also contains harmful substances), as a result, toxins not broken down by the liver get into blood and can harm many internal organs 🙁 so draw your own conclusions.

P.s. my advice to you regarding meat / chicken soups / broths, etc. promoted by doctors. Meat can also be in the soup, but it is better to boil it separately and only then add it to the dish; the soup itself should be on vegetable broth ... (useful for those who cannot live without soups).

By the way, I am accustomed (like most of our people) to soups, borscht, etc. And I eat when I have and I'm not going to change anything. I’m high, besides, all this can serve as an excellent variety or pushing agent)) when there is buckwheat or rice, I’m already fed up ... But! I also eat separately and fresh fruits and vegetables DAILY, in the quantities I need, but in any case, everyone decides for himself.

Sincerely, administrator.
